Cinnamon Oatmeal Cookies

Cinnamon Oatmeal Cookies
2 ½ cups butter or shortening
5 cups sugar
4 eggs
1/3 cup molasses
1 T. vanilla
4 ¾ cups quick cooking oats
4 1/3 cups all-purpose flour
4 tsp. baking powder
4 tsp. ground cinnamon
1 tsp. baking soda
1 tsp. salt
Chopped walnuts or pecans (optional)
Dried, sweetened cranberries (or raisins)
In large mixing bowl, cream shortening and sugar.
Add eggs, one at a time, beating well after each addition.
Beat in molasses and vanilla.
Combine remaining ingredients; gradually add to creamed mixture.
Drop by tablespoonfuls or small scoop 2” apart on greased baking sheets or stone.
Bake at 350° for 10-12 minutes or until edges are firm.
Yield: 3 dozen (large cookies)
