Set aside:
1 lb. ground hot Italian sausage (If you are using links, remove casing.)
3-4 strips bacon
Mix together gently:
2 lb. ground sirloin
Italian seasoned bread crumbs (as needed to bind meatloaf together)
1 large onion, chopped
1 large green pepper, chopped
2 eggs, beaten
Salt/Pepper
Mix together in separate bowl:
1 can crushed tomatoes
1 can tomato sauce
1/4 cup catsup
1/4 cup yellow mustard
2-3 T. Worcestershire sauce
2-3 cloves of garlic (finely minced or puréed)
Pour tomato mixture into bowl with meatloaf mixture and gently stir.
In an non-greased loaf pan, place one-half of meatloaf. On top of meatloaf, place a layer of ground Italian sausage. Top with remaining meatloaf.
Cover top of meatloaf with bacon strips.
Bake at 350 degrees for 1-1 1/2 hours (until beef is well done). Drain grease and remove bacon. Top with sauce and bake additional 10-15 minutes.
Sauce (cook in small saucepan while meatloaf is baking)
1 can crushed tomatoes or tomato sauce
1 cup brown sugar
1 onion, chopped
1 clove of garlic (finely minced)
